Cauliflower.....haven't been a fan. A couple years ago I made a cauliflower pizza crust and it was 'okay.' I hadn't eaten it, again, until a few weeks of ago. This go round I've been steaming it and sprinkling with a bit of seasoned salt. It's good!
A friend told me recently about eating creamed cauliflower, how simple it was to make and oh, so delicious! I thought I'd give it a shot and boy, was I glad I did! To me it tastes just like potatoes. I bet I could fool a lot of people, for sure!
3-4 cups steamed cauliflower
1/2 cup heavy cream
2 T. unsalted butter
1/2 tsp. salt
1/4 tsp. pepper
Add all ingredients to a blender or food processor, blend until creamy and serve.
Tips & Thoughts: Next time I plan on using less cream to try and make mashed cauliflower.
